David’s “Oats McGoats”

The other day I smelled the most delicious scent coming from the kitchen. It was unusual because I wasn’t the one cooking! It turns out my uncle was making a batch of oats that he calls, “David’s Oats McGoats.” Why the name? We’ll never know! But his recipe takes boring oats into a whole new world of flavor. This is perfect to serve for special occasion breakfasts or brunches.

6 cups of water
1/2 tsp all spice
1/2 tsp salt
1 1/2 teaspoon cinnamon
1 tsp lemon juice
2 tsp vanilla
2 cups steel cut oats
1 cup coconut
1/2 cup dried cranberries
1/4 cup honey

1. Mix first 6 ingredients in a saucepan and bring to a boil.
2. Add oats, coconut, and cranberries. Cover and reduce to a slow simmer for 15-20 minutes, or until it reaches your desired tenderness. Stir occasionally. Half way through cook time add the honey.
3. Remove from heat and let oats rest for 10 minutes before serving.
