Chocolate Chip Cupcakes with Chocolate Buttercream & White Chocolate Shavings


I love the idea of combining vanilla and chocolate but wanted to be a little more complex than a vanilla cupcake with chocolate frosting. This vanilla cupcake has a dense crumb texture and chocolate chips throughout, with a rich chocolate buttercream and white chocolate shavings on top for a truly decadent experience.

3 sticks unsalted butter, room temperature
2 cups white sugar
5 extra-large eggs, room temperature
1 1/2 teaspoons vanilla
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 cup room temperature buttermilk
1 cup semisweet chocolate chips, tossed in 1 tbs flour

3 sticks unsalted butter, room temperature
4 cups powdered sugar
3/4 cup semisweet chocolate chips
1 oz bittersweet chocolate (I use this for a bit of depth in the frosting, but it is optional)
1 teaspoon vanilla

White chocolate for garnish

Yields about 32 regular cupcakes


For the cake:
1. Preheat the oven to 325. Put liners in your cupcake tins.
2. Cream the butter and sugar on high speed until ultra fluffy and light. This takes about 4-5 minutes. On low speed add the eggs one at a time, making sure to scrape the bowl down when needed. Add the vanilla and mix well.
3. Sift the flour, baking powder, baking soda, and salt in a separate bowl. In 3 parts, add the dry ingredients then buttermilk. Start and end with the dry. Quickly fold in the chocolate chips.
4. Fill the liners almost to the top. Bake for 25-30 minutes. The tops should just be slightly golden and a toothpick comes out clean. Avoid under baking especially because they will cave in if you do. Let cool in pan for 15 minutes then transfer to a wire rack.
5. Frost and decorate. Can be made one day a head if stored at a cool temperature away from sun.

For the frosting:
1. With the whisk attachment, beat the butter until smooth. Slowly add 3/4 of the powdered sugar, then add the vanilla. Add the rest of the sugar and beat until fluffy.
2. In bursts of about 20 second intervals, melt the chocolates just until smooth. The mixture should never get too hot.
3. Scrape the chocolate into the buttercream and beat until totally combined. Keep beating until the frosting seems voluminous. Frost the cupcakes right away.
For the garnish:
1. Use a vegetable peeler to make tiny curls of chocolate. I do this right over the cupcakes. When I tried to curl them onto a plate and then put them on, they broke up and didn’t look as pretty.
