Gluten Free Banana Muffins with Almond Meal & Coconut

One of my family members has been trying to go gluten free. He seemed to be having a hard time, so I thought I’d try my hand at making a baked good that was gluten free so he wouldn’t feel left out. I had almond meal on hand and was surprised by how delicate and tasty these banana muffins turned out. We actually liked them more than regular banana muffins! The cool thing about these muffins is that you don’t have to worry about over-mixing the batter, which is an easy and common way for regular banana bread or muffins to go wrong.

Ingredients
3 medium bananas, mashed
2 eggs
3/4 cup raw honey
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
1 3/4 cup almond meal
3/4 cup shredded coconut

Yields 12 cupcakes

Directions:
1. Preheat the oven to 350. Spray a muffin tin with a non-stick spray.
2. Thoroughly stir the bananas, eggs, honey, and vanilla in a bowl.
3. In a separate bowl combine the rest of the ingredients. Pour dry ingredients into the wet. Stir until completely combined. Distribute into muffin tin.
4. Bake for about 20-25 minutes or until a toothpick comes out clean. Let cool in the tins then remove to a wire rack.

  1. That`s very important to the newly gluten free to have family support. I would never survive if my family didn`t make a separate pie and stuffing for me on Thanksgiving, for example. I`m so blessed that my family is so supportive, and it seems like your family member is too!
