Quick and Easy Dark Chocolate Brownies

These brownies are quick and easy for when you need your chocolate fix and don’t want to deal with melting butter and chocolate chips over a double boiler. The dark cocoa powder and heaps of vanilla extract give them a sophisticated decadent flavor.

Nuts can easily be omitted, or you could add a half cup of chocolate chips instead.

1/2 cup vegetable oil
2 eggs
1 cup of white sugar
1 tablespoon vanilla extract
1/2 cup whole wheat flour (or all purpose, it is totally up to you)
1/2 cup Hershey’s special dark cocoa powder (or any other cocoa powder)
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts or pecans

1. Preheat oven to 350 degrees. Grease a 9×9 baking pan. If you want to ensure they come easily off the bottom, add a square of parchment paper on the bottom.
2. In a medium bowl, whisk the oil, eggs, sugar, and vanilla together until completely blended.
3. Add all the dry ingredients and whisk until combined. Add nuts or chocolate chips if desired.
4. Bake for 20-25 minutes. The edges should just pull away from the edges. Let them cool at least 10 minutes before cutting.

  1. Those look so moist and delicious! I’ve never had much luck with homemade brownies (they always end up more like a dense/dry cake). I should try these!
