Quick Nappa Cabbage Slaw with Lime & Jalapeño

I came up with this recipe when I had some extra Nappa cabbage and was delighted with the light, refreshing taste and versatility of the slaw. You can easily eat it as a side, or add chicken or tofu to it to make it more of a meal. It’s so simple it only takes a few minutes to prepare. The flavors enhance as it sits, but it is also delicious if you eat it right away.

Half a Nappa cabbage, thinly sliced (double recipe if you want to use the whole cabbage)
1 jalapeño, seeded and diced
2 green onions, sliced
1/4 cup fresh lime juice
2 tablespoons sesame oil (olive oil is a fine substitute)
1 tablespoon honey or sugar
1/2 teaspoon salt
1/4 cup sliced almonds (optional)

1. Whisk together lime juice, oil, honey, and salt.
2. Add the jalapeño, green onion, and cabbage. Toss well to combine.
3. Add the almonds just before serving.
